Banh cam (orange cake) or Vietnamese fried sesame ball with mung bean paste is a popular and delicious cake of Vietnamese people. It is named “banh cam” because of its round and pretty shape as an orange. There are two types of this cake: the cake with salty filling and cake with sweet filling, especially cake with sweet filling is more popular. If you enjoy orange cake once time, it’s difficult to forget the scent of mung beans, the greasy taste of coconuts, the sweetness of sugar and the scent of sticky rice crust.
To cook the most delicious and eye-catching cakes, people who make cake need to pay attention from kneading the dough to frying the balls step. You need to carefully knead the dough and make the crust stick to the filling, in order to avoid breaking. It’s essential to deep in boiling oil and stir well so as to have a golden color on each side.
A special tip making balls crispy in a long time is that you should not fry too many balls at the same time so as to have space for puffing up. Instead of frying many balls in a big pan, a deep pan is the best choice and you should divide many batches. In some areas, after frying sesame balls, you can make ‘orange cake” more beautiful and attractive by spreading caramel sugar.
Ingredients for 14 fried sesame balls
For the crust:
- 150g glutinous flour
- 20g rice flour
- 30g potato flour
- ½ teaspoon of baking powder
- 7-8g vanillin sugar
- 40g sugar
- Salt, white sesame seeds
For the filling
- 150g split green beans
- 80g sugar
- 7-8g vanillin sugar
- 1 tbsp of cooking oil
- 1 tbsp of corn flour (tapioca flour)
- 30g dried and milled coconut
Steps making fried sesame ball with mung bean paste
Washing and soaking green beans for 2 hours, maybe soak overnight.
Preparing about 30g potato flour.
Potato flour which is cooked becomes milled potato; you may buy it in supermarkets, it is always available.
Add glutinous flour, rice flour, potato flour, baking powder, vanillin sugar, sugar, and a little salt into a plastic bag as a picture ( using plastic bag helps you to mix flour easier and cleaner).
Pouring about 220ml hot water 60-700 into plastic bag then tighten and knead it until flour is not sticky to plastic bag. Put flour into cling film and rest for 30 minutes.
About filling, you should steam or cook green beans and make it mill, then adding 80g sugar, 1 package of vanillin sugar, cooking oil, corn flour and stir this mixture. It depends on your taste, you can add shredded coconut and refrigerate filling.
When the filling with green beans becomes cool, you roll it into balls as picture and keep refrigerated until ready to use.
After brewing the dough, we will divide the dough into small balls, next you roll into thin layers.

Step 9: Frying the sesame balls
Preparing a deep wok, pouring cooking oil and heat oil with medium – high heat.
Note: Frying several sesame balls in a batch for puffing up. When frying, you should remember to stir the balls well to avoid explosion.
Frying until cakes puff up bigger than the beginning and each side becomes golden color.
