Pateso cake or pâté chaud is originated from French, featured by a one-thousand-layer crust and the attractive scent.
Pateso cake, exactly pronounced is Paté Chaud, which is a particular favorite food of the French people and they have it every morning. The most impressive thing of this cake is thin layers of serrated edges are stacked, crispy and fragrant. To create an attractive cake, before baking, you should spread a layer of egg yolk on the surface of the cake.
The cake’s filling usually is minced pork, but sometimes many people fill the cake with minced beef or chicken. Besides, people can also create many different types of Pateso such as vegetarian Pateso, sweet and salty filling. Depending on your taste, you can choose your favorite type of cake.
Despite being a French cake, when Pateso appeared in Vietnam, it was loved by a large number of young people. Many young people have learned how to make Pateso and confidently cook for their families to enjoy. You can refer to the following tips.
For the crust:
- 400 gr plain flour
- 300 gr butter
- ½ a lime
- 220-230 ml cold water
- a teaspoon of salt
For the filling:
- 500 gr minced pork
- 2 tablespoons of chicken liver or pork liver pate
- 1 teaspoon of sesame oil
- 1 teaspoon of seasoning
- 1 teaspoon of pepper
- 1 chopped large onion
- ½ teaspoon of sugar
Mixing ingredients together in a large bowl. Depending on the taste, you can reduce the spice for delicious taste.
Steps of making Pateso cake
Step 1: Adding plain flour, 1 teaspoon of lemon juice and 50 gr butter into the bowl, putting on gloves and mixing well. Then slowly pouring the water, kneading until the dough is smooth, not sticky.
Step 2: The dough is put into the cling film and rested for 20 minutes.
Step 3: After 20 minutes, you take the dough. Now the dough is very soft and flexible, sprinkle some plain flour on the dough and rolling it out, putting butter in the middle and packing the 4 edges of the dough so that the butter is not exposed to the outside.
Step 4: Now flatten the dough (rectangular) and folding in half, then folding in half again. Covering the dough carefully with a cling film and putting it into the refrigerator for 20 minutes.
After 20 minutes, taking the dough, sprinkle a little plain flour on the dough, and flattening it with long – thin shape, folding 2 corners, then folding the dough in half. Step 5: For the fourth time, flattening the dough and using a knife or a cake pan to cut the dough into shape what you want.
Step 6: Filling the dough with minced pork.
Then you put another piece of dough on the sticky edges.
Step 7: Putting the cake into oil absorbent paper.
Step 8: Taking an egg and whisking egg yolk, spreading on the surface of the cake.
Step 9: Turning on the oven with 180 – 190 degrees C for 15 minutes to make the oven hot before putting the cake into it for 25-30 minutes.
When the surface of cakes become golden, you can take it out, put on the plate and enjoy it.
