Broken rice is a common dish at a reasonable price, so many Vietnamese people enjoy it every meal. To make a delicious and flavorful dish of broken rice you can not forget a crucial part. It is Vietnamese steamed egg meatloaf.

Specific characteristics of Vietnamese steamed egg meatloaf is the mixture of simple ingredients including pork, glass noodle, green onions, garlic, carrots, eggs… The combination of these brings an attractive flavor, making you eat without getting sick.

The process of Steamed egg meatloaf is quite simple, just 15-20m when following the below recipe, you can make an appetizing dish that satisfies your family.

Ingredients for Cha trung recipe:

  • Ground pork: 150gr
  • Duck egg: 5 eggs
  • Wood ear mushroom: 15gr
  • Glass noodles
  • Cooking oil
  • Shallot, chili, pepper

Steps for making Cha trung recipe:

Step 1:

Soak dried wood ear mushroom and glass noodles into warm water. Waiting for it enlarges and becomes soft then chop the wood ear mushroom.

Cut glass noodles into small pieces about 0.5cm.

Step 2:

Peel and mince the shallots. Beat 5 duck eggs and put them into a big bowl. Divide egg yolk and egg white into 2 different bowls, the egg yolk is used to spread on the surface of  the steamed egg meatloaf  to create an attractive yellow in the final step.

Step 3:

Mix all the ingredients  which have just been prepared, including ground pork, wood ear mushroom, glass noodles, chopped shallot, 4 duck eggs, 1 tsp of ground pepper, ½ tsp of seasoning, ½ tsp of salt, 1 tsp of sugar, 3 tsp of fish sauce, 2 tablespoons of cooking oil.

Beat the mixture gently and well by chopsticks until ground pork is well-mixed, making this dish tastier.

Step 4:

Spread cooking oil or butter on the surface of the tray in order to make a non-stick layer for the steamed egg meatloaf. Put and spread the mixture by a tablespoon. Cover the tray by cling film and steam it for about 20 minutes.

While you steam this dish, you should not take off the lip to avoid water vapor, leading to time-consuming to cook or uneven cook.

Step 5:

After steaming the meatloaf for about 20 minutes, opening the lid and using a toothpick to check doneness: poke the toothpick in the meatloaf, draw it, if the toothpick is not wet and sticky, the food is finished.

Step 6:

To create a golden color for the surface of this dish, you can mix 1 egg yolk and 1 tablespoon of cashew oil, then whisk the mixture well and spread on the surface of the meatloaf. Don’t put on the lid and continue to steam for 5-7 minutes.

Step 7:

When the surface of egg meatloaf dries, you can use your fingertips to touch this surface. If this is not sticky, you can turn off the cooker and take the finish out of the tray. The final step is enjoying with broken rice.
