I. Ingredients for making poached chicken salad
- Chicken breast: 300 Gr
- Onions: 1
- Carrots: 1
- Cucumber: 1
- Lemon: 3
- Red shallot: 3
- Peanuts: 100 Gr
- Laksa leaves: 10 Gr
- Coriander: 10 Gr
- White Sugar: 1 Tbsp
- Fish sauce: 2 Tbsp
- Chili: 2
II. Instruction for making Poached chicken salad
Wash chicken breast with salt water. Boil the chicken with 1 tablespoon of seasoning. The chicken shouldn’t be overcooked, because it will make the meat no longer sweet and can be tough. When the chicken is cooked, take it out and shred it.
Peel onions, slice and soak it into water, then take it out and mix with 2 teaspoons of sugar. Grate carrots and cucumbers. Wash and slice herbs.
Make fish sauce: add 2 tablespoons of fish sauce, 2 teaspoons of sugar, chopped chili, 2 teaspoons of lemon juice, stir until sugar is melted.
Slice red shallot and fry with cooking oil.
Pound roasted peanuts. Slice lime leaves. Then, put all the vegetables in the large bowl, mix well, then add the chicken.
