Kien Giang is the large coast land on the south pole of Vietnam. Blessed with an abundant bounty of sea life, Kien Giang has a variety of fish, lobster, shrimp, crab…. Once coming here, the tourists are always served with many maritime specialities that cannot forget. However, there is a huge lack if you miss a chance to enjoy the typical bun ca kien giang dish.

The name of “bun ca kien giang” has appeared for a long time. Initially, the local people just consider bun ca as a daily simple dish, not for commercial purpose so it just was named as “Bun Ca”. Perhaps, the name of “bun ca kien giang” was named by the people from other regions. The mnemonic name is to distinguish with the other bun ca dishes. Afterward, with particular interest, there are someone began selling “bun ca kien giang”. Now “bun ca kien giang” is one of the most famous dish in Kien Giang.


In Kien Giang, the local prefer enjoy “bun ca” at street stalls or market food stall that they are served as “the God”. With a simple bun ca kien giang recipe, you can easily make it at your home.

1.The ingredients for bun ca kien giang recipe:

  • 1 kg vermicelli noodle
  • 1 snakehead fish
  • 200 gram shrimp
  • Bean sprouts, spring onion, red shallot, garlic, knotgrass
  • Salt, sugar, season…

2.The process of making bun ca kieng giang recipe:

 Step 1:

  • Peel and devein shrimp, wash clearly then drain out
  • Put a pain into medium heat, add minced shallot, garlic, peeled shrimp then stir-fry until fragrant. Season with sugar, fish sauce, and a little water to make gelatinous sauce mixture. Stir evenly until be cooked then place into a plate.


Step 2:  

  • After buying snakehead fish, clean well with vinegar, spread meat and bone, skip the stomach.
  • Pour cooking oil in large pot, add slice shallot and stir lightly. Put fish into pot and pour more about 1 liter water then cook. Season with salt, sugar, monosodium glutamate and 2 tbsp of fish sauce
  • Scoop the dirty bubbles on the surface to make the broth clean ( You can add chicken bone into pot to make the broth bland and light.)
  • When fish is cooked, take fish out and set the fish meat aside.


Step 3:

Assemble the bowl of bun ca:

  • Scald a handful of vermicelli noodle and bean sprouts into the broth pot then place into a bowl.
  • Top some bite of fish meat, simmer shrimp into the bowl. Sprinkle minced knotgrass, fried shallot, sliced spring onion over the vermicelli noodle
  • Ladle hot soup over the noodle from broth pot. Add some pepper and chili paste to fit your taste.
