Beside black bean sweet soup, red bean sweet soup is one of the simplest but tasty dishes of Vietnamese people. The main ingredient is red beans which have positive effects on health. It is little calories and high fiber food, so it plays a crucial part in beauty care and weight loss, and it is taken advantage of by women. Red bean sweet soup has a reasonable price and is very popular in Vietnam, so you can find it at any corners of the streets all year.
Cooking red bean sweet soup is similar to the black one, not too many differences. You can eat red bean along with coconut milk, lotus seed or sweet-potato flour… it depends on your taste. Processing is easy and not time-consuming, everyone can make a home-cooked dish to enjoy with their family. Ingredients for Red bean sweet soup:
- 200g red beans
- 20g tapioca (small tapioca pearls)
- Sugar ( Depending on your taste)
- 150ml coconut milk
- ½ tsp of salt, 1 tsp of sugar, 1 tsp of cornstarch (or tapioca flour)
- Roasted groundnuts (depending on your taste)
Cook red bean sweet soup:
Step 1:
Rinse the beans under cold water, pick out bad red beans.
Cover red beans with cold water and soak in water overnight. The next day, drain and rinse before cooking.
Step 2:
Cook red beans and water until the beans have become tender, add sugar. Cook and boil over low heat to let red beans soak with sugar.
Step 3:
Soak tapioca pearls in cold water from 15 to 20 minutes until the tapioca pearls enlarge
Step 4:
After the beans and sugar blend together, add tapioca pearls, use a tablespoon to stir gently to keep the beans not crushed, boil until tapioca pearls float. Add some sugar to fit your taste.
Step 5:
Add coconut milk, salt, sugar, cornstarch into the pot, cook over low heat until coconut milk turns consistent.
Step 6:
Ladle the sweet soup out a glass, souse coconut milk, add shaved ice, add jelly and sprinkle roasted peanuts. It depends on your taste.
