Chicken rice is a delicious dish which is loved by many Vietnamese people. Chicken is cleaned, washed by salt water and drained. Strain the chicken fat separately to stir-dry with rice.

Prepare a pot with 2 liters of water. Add 2 tablespoons salt. Put chicken into the pot, cook over medium heat. Putting chicken into the pot before boiling helps prevent the skin from cracking. Ginger is sliced and dropped in chicken broth.

Stir fry rice over high heat so that the rice becomes firm and tasty.

Pour chicken broth into the rice. Continue to cook. Note: you should add less water than when you cook rice to make it not too doughy.

When chicken broth is boiled, turn off the cooker, cover the pot with a lid for 15m. Take chicken out, wash it through cold water to make its skin crunchy. Chop it into even pieces. Present it on the plate. Cut cucumbers to decorate.

Prepare dipping Sauce:

Hainanese chicken is eaten with ginger fish sauce by many Vietnamese families. If you want to cook according to Hainanese or Singapore style, you can use soy sauce. Ginger is finely chopped, onions are minced. Put ginger and minced onion in a pan and fry until getting fragrant, add 2 tbsp of oyster oil + 1 tbsp of soy sauce + 1 tbsp of sugar + 4 tbsp of chicken broth + 1 tbsp of cornstarch. Boil it and finish.

Put the chicken on the plate. Decorate with cucumber and green onions. Enjoy it with soy sauce. You can eat chicken broth and rice together.
