The ingredients for making pickled vegetables in fish sauce are mainly tubers vegetables such as daikon, carrot, kohlrabi. Besides, you can add others such as cucumber, papaya, etc. according to your preferences. You also need some spices to pickle the vegetables such as fish sauce, sugar, and salt. These are all simple and easy-to-find ingredients.

Pickles is a combination of many tuber vegetables, so it has a variety of nutrients such as fiber or vitamins. I. Ingredients for pickled vegetables in fish sauce

Fish sauce:

  • 300 ml fish sauce
  • 50 ml water
  • 180 gr sugar
  • 1 teaspoon of salt

Vegetables:

  • 1 daikon
  • 1 carrot
  • 1 kohlrabi
  • 5 small chili
  • 5 shallots
  • 5 cloves of garlic
  • 2 tablespoons of salt

II. Instructions for making pickled vegetables in fish sauce

Step 1:

Cut all vegetables into flower shapes or cut them into a bit thick pieces. Then add salt, squeeze, and leave for 10 minutes for the vegetables to soften.

Then rinse with cold water, squeeze dry. Put the vegetables on a tray and dry in the sun. You just need to let them a bit withered.
Step 3:

Boil 1 pot of water. Boil the vegetables that have been dried in the sun briefly (1 minute), then pour into a basket to drain. This step helps to remove dust and dirt that cling to when they are exposed to the sun. If you use drying oven, you can skip this step.
Step 4:

Put fish sauce + sugar + water and salt in the pot and boil for 5-7 minutes, then turn off the stove. Skim off foam, let cool completely.

Step 5:

Put the vegetables in the jar, pour the fish sauce over the vegetables, it can be eaten after 2 days.
