Vietnamese cuisine in particular and Asian cuisine in general, pork rib is one of the most popular cooking ingredients. From this ingredient, with skillful cooking ability, you can make a lot of unique dishes such as sweet and sour fried pork ribs, fried pork ribs with fish sauce, grilled pork ribs … one of those is caramelized braised pork ribs.
Caramelized braised pork ribs are made from very simple and popular ingredients including pork ribs and spices such as pepper, fish sauce, garlic, onion … Braised pork ribs are often served with hot rice, rice noodles and some vegetables.
Braised pork ribs seems to be a simple dish, but many people don’t know how to make it, delicious pork ribs or not depends on the marinating stages. You can make braised pork ribs with pepper, radish or coconut meat, depending on your taste.

Prepare ingredients for making Suon kho recipe:
- 700 gr young ribs
- 1 tsp of black pepper
- 1-2 tsp of sugar
- 1 red shallot
- 1 garlic
- 1-2 tsp of fish sauce
- 1 tsp of seasoning
- 1 tsp of soy sauce
- Water or coconut water
Instruction for making Suon kho recipe:
Step 1:
Wash the pork ribs and drain, then chop them into bite-sized pieces.
Step 2:
Boil a pot of water, then put the ribs into the pot to blanch for about 1 minute, take the ribs out and wash in cold water and drain.
Step 3:
Peel and chop the red shallot and garlic.
Step 4:
Put the ribs in a bowl with minced red shallot and garlic then add seasoning, pepper, fish sauce and stir well and marinate the ribs for 30 minutes to absorb spices.
Step 5:
After marinating the ribs, put a wok or saucepan on the cooker.
Add sugar, 2 tablespoons of water, and stir the sugar until it becomes the amber color to get the caramel water.
Add all the spiced ribs to stir fry, stir the ribs well until the surface is golden and getting fragrant. Add soy sauce and stir well.
Step 6:
Stir the ribs evenly to absorb the caramel water, then add water or fresh coconut water to cover all the ribs.
Put on the lid and cook until it boils then turn the cooker to a low heat, continue to braise until the ribs drain out of water, while braising the ribs sometimes you should stir.
You can add more spices to suit your taste, when the ribs turn golden and tender, sprinkle a little pepper and turn off the cooker, and there is a little bit of water into the pot. Ladle the ribs out and spread ribs’ water, you should enjoy when this dish is still hot.
