Rice noodle soup is considered a traditional Vietnamese dish, but not many Vietnamese people knew it. And it is sometimes improperly called Crab noodle soup. However, nowadays, this dish has been favored and sold popularly in many places from the North to the South. It can be said that this is a common dish which you can find everywhere from Hanoi to HCM City.

“Where is this dish from?” is a question of many people and it also causes many opposite opinions, However, it is well-known as dish from the capital of Vietnam. And when it is migrated to other cities, the way of processing and spices will be changed, so that its taste is more suitable for local people there. The broth is considered the soul of the dish, so the cook have to make the broth trickily.

This dish is different from the Crab noodle soup, because it includes thick noodle strand and is only served with boiled water spinach instead of aromatic herbs or bean sprouts. About the broth, it has a different variation depending where it is maked. So it can be cooked with many styles and some localities use the broth of crab noodle soup to eat with this dish.

When eating, you should assemble the noodles at the bottom of a bowl and cover it with the broth and ingredients. You can eat with boiled water spinach or aromatic herbs, it depends. You can also add a little chili, chopped green onion and shrimp paste before eating. The broth is clear and sweet thanks to stewed pork bones. Redness from cashew oil, ripe tomatoes makes the dish more attractive.

In the cold weather, eating this hot dish is the best. This dish is suitable for family on holidays or weekends. If you don’t know how to make it, you can follow these steps below!




Ingredients for rice noodle soup recipe:

  • 500g pork bones or pork ribs
  • 1/2 small bowl of dried shrimp
  • 1/2 small bowl of pork, you can add fresh shrimp or crab meat (it depends on your taste)
  • 2 eggs
  • 2 small teaspoons of cashew oil or red powder
  • Tofu, pig’s blood pudding
  • Vegetables: spinach, bean sprouts, lettuce, green onions, coriander, lemon and chili sauce
  • 2 tablespoons of shrimp paste
  • Spices: sugar, salt, seasoning, pepper, dried onions.

How to cook Vietnamese rice noodle soup:

Step 1:

Wash the pork bones, boil water, put the pork bones into the boiling water, remove the dirty water, then wash the bones again, add further water to cook the broth.

Step 2:

Shrimp paste mixed with a little cold water, filtered the sand out, slowly pour shrimp sauce into the broth, boil it, add two teaspoons of salt and one teaspoon of sugar.

Soak dried shrimp then ground.

Thinly slice ground pork, then grind it, or you can buy processed ground pork.

If using fresh shrimp, you should peel off the shrimp shell, pull out the black digestive tract and grind.

Mix dried shrimp, ground pork, fresh shrimp, eggs, chopped dried onions, a tablespoon of shrimp paste, a little pepper, a small spoonful of salt, a small teaspoon of sugar, then mix well.

Pick fresh water spinach and boil a pot of water with a little salt, then add the water spinach.

Next, put the spinach into a bowl of cold water with some ice so that the spinach remains green. Put the water spinach in the basket to drain, then put on a plate.

Fry tofu and slice it.

Pig’s blood pudding is washed, and blached into boiling water, cut into bite-size pieces.

Wash and drain lettuce, bean sprout, spring onions, coriander.

Put fresh noodles into the basket, if you use dry noodles, you have to soak the noodles in a bowl of cold water for about 30 minutes then pour into the basket to drain and pour cold water into to avoid being stick together.

Use a small pot, heat two small spoons of cashew oil, fry dry onion, and pour into it a little broth. Continue to pour the cashew oil mixture into the pot of broth to create a beautiful color. Boil it, add a little of the mixture of shrimp and ground meat into the broth. When it is boiled, each slice of shrimp will float on the surface.

Next, add pig’s blood pudding and tofu to boil with, add spices.

You should put the broth with tofu, pig’s blood pudding, a few pieces of shrimp, and a little vermicelli into a pot, then boil. After that, add water spinach, scallions, coriander. Enjoy with vegetables, a few drops of lemon, a little shrimp paste, chili sauce, mix well.
