Ga Roti (Rotisserie chicken) is a typical dish of French cuisine in early 20th century and continues to be popular until this day. To make rotisserie chicken, whole chicken after being cleaned will be marinated with 10 types of herb, spices and fresh fruit such as orange, star anise, cinnamon… in 24 hours before being baked.

In Vietnamese cuisine, the way of making rotisserie chicken has variations to be suitable with Vietnamese people. Rotisserie chicken is marinated with onion, garlic, pepper, soy sauce, five-spice powder, herbs and fried, then add coconut water, poach until it is dried up. The unique thing of this dish is not using fish sauce but soy sauce instead. It also helps distinguishing with roasted chicken, which is marinated with fish sauce, pepper and sugar.

Making rotisserie chicken is simple but the flavor is very rich, fragrant and sweet because of coconut water, which is suitable to eat with rice, steamed sticky rice, noodle or crispy bread.




Ingredients for ga roti recipe:

  • Chicken thighs
  • 1 fresh coconut
  • 1 dry onion
  • Some garlic cloves
  • 2 tbsp honey
  • 1 tbsp white wine
  • 1 tbsp soy sauce
  • Salt, seasoning, pepper
  • Oil

Note: To make rotisserie chicken, you can choose chicken thighs, wings or whole chicken, depending on your favor. When cooking this dish, most people use chicken thighs because they have meat, skin and bones, the toughness is moderate, not too soft and dry like breast or have many bones like wings.

Instruction for making ga roti recipe:

Step 1:

Squeeze chicken thigh with a little salt and wash again, let it drain or absorb it, then use knife slash some lines to help thigh absorb spices better. Chop dry onions and garlic.

Step 2:

Put thigh into a bowl with a little salt, soy sauce, seasoning, pepper, chopped garlic and onion and mix them, marinate in at least 30 minutes or keep it overnight in the cool compartment to make meat absorb spices and tastier.

Note: If you marinate chicken overnight, you must put in into the fridge to marinate and preserve it, chicken at the normal temperature will be spoiled.

Step 3:

Put pan on the stove with a little oil, when oil is hot, add thigh and fry until both sides is scorching. Time to fry is from 15 to 20 minutes.

When chicken is fried both 2 sides, pour coconut water in such a way that the amount of water is just below the top of chicken. Next, add honey, stir and cover again, cook until it boils and turn down the heat. When cooking, sometimes you should open the lid, turn over chicken to make it absorb spices and have beautiful color.

Simmer until the sauce is consistent, check the spices and turn off the stove.

Take chicken thigh out and put into a dish, eat with hot rice, steamed sticky rice or bread with a little chili sauce.
